Tomato Basil and Arugula Salad

A fresh, vibrant dish that combines juicy tomatoes, peppery arugula, and fragrant basil dressed in olive oil and balsamic vinegar


  • 3 tsp olive oil
  • 1/3 cup balsamic reduction
  • 2 tbsp dried Italian seasoning
  • Salt and pepper, to taste
  • 1 container 8 oz mini mozzarella balls
  • 1 pint cherry or grape tomatoes, halved
  • 1 large tomato cubed
  • 1/2 red onion thinly sliced
  • 5 cups packed Soli Organic Baby Arugula
  • 1 1/2 cup packed Soli Organic Basil leaves, torn or left whole


  1. Combine olive oil, Italian seasoning, and a generous amount of salt and pepper in a salad bowl.
  2. Add tomatoes and mozzarella and toss to coat. Let sit at room temperature for 30 minutes.
  3. Add arugula, onion, and basil and toss until combined. Add more olive oil and salt and pepper if needed.
  4. Top with balsamic reduction. Serve immediately.
