A fresh, vibrant dish that combines juicy tomatoes, peppery arugula, and fragrant basil dressed in olive oil and balsamic vinegar
Ingredients
- 3 tsp olive oil
- 1/3 cup balsamic reduction
- 2 tbsp dried Italian seasoning
- Salt and pepper, to taste
- 1 container 8 oz mini mozzarella balls
- 1 pint cherry or grape tomatoes, halved
- 1 large tomato cubed
- 1/2 red onion thinly sliced
- 5 cups packed Soli Organic Baby Arugula
- 1 1/2 cup packed Soli Organic Basil leaves, torn or left whole
Directions
- Combine olive oil, Italian seasoning, and a generous amount of salt and pepper in a salad bowl.
- Add tomatoes and mozzarella and toss to coat. Let sit at room temperature for 30 minutes.
- Add arugula, onion, and basil and toss until combined. Add more olive oil and salt and pepper if needed.
- Top with balsamic reduction. Serve immediately.
