Herb Roasted Chicken Served Over Fresh Greens

  • ½ cup balsamic vinegar
  • ¼ cup olive oil
  • 3 cloves garlic, minced
  • 2 tbsp chopped Soli Organic Italian Parsley
  • 2 tsp minced Soli Organic Rosemary
  • 2 tsp chopped Soli Organic Thyme
  • 1 teaspoon dried sage
  • salt and pepper to taste
  • 6 skinless, boneless chicken breasts
  • Soli Organic 50/50 salad


  1. Blend vinegar, oil, garlic, parsley, rosemary, thyme, sage, salt, and pepper in a blender until well combined. Place chicken in a gallon zip lock bag and pour in the marinade. Remove air from the bag and seal and massage marinade into the breasts. Put in the refrigerator for at least 2 hours or up to 48 hours.
  2. When ready to cook, preheat the grill to medium-high heat and lightly oil the grate. Remove chicken and grill. Discard the remaining marinade.
  3. Cook chicken on the preheated grill until no longer pink in the center and the juices run clear, 6 to 7 minutes per side.
  4. Plate your chicken over Soli 50/50 mix with your favorite salad toppings.
