White Bean and Vegetable Soup with Fresh Herbs

  • 1 medium onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 (15-ounce) can cannellini beans, drained and rinsed
  • 1/2 (15 ounce) can chickpeas
  • 1 (15-ounce) can diced tomatoes, undrained
  • 1 cup chopped zucchini
  • 1/2 cup chopped fresh kale or spinach
