Impress your valentine with a delicious basil bruschetta appetizer. Topped with prosciutto roses, burrata, tomatoes and a pop of fresh basil, they'll fall more in love with every bite.
Ingredients
- 1 head of garlic
- 1½ cups cherry tomatoes
- 5 slices prosciutto
- ⅔ cup olive oil
- ¼ cup kalamata olives
- Italian seasoning
- 1 tablespoon balsamic vinegar
- 1 loaf Italian bread, sliced
- 16 ounces burrata
- Soli Organic basil
- Salt and pepper
Directions
- Preheat the oven to 375 degrees. Peel the garlic, remove the cloves, and slice them to be bite size. Coat the garlic in 3 tablespoons of olive oil, salt, and pepper in a foil bowl on a baking sheet and roast until golden brown, about 15-25 minutes. Once golden, drain the oil and save for later.
- In a pan, cook the cherry tomatoes in 2 tablespoons of olive oil for 8 minutes. Sauté the tomatoes with the roasted garlic, olives, 2 tablespoons olive oil, balsamic vinegar, and a pinch of Italian seasoning on medium heat for 5 minutes.
- Create the prosciutto roses by cutting each slice of prosciutto into 4 smaller pieces, folding each piece in half, and rolling into the shape of a rose.
- Decrease the oven temperature to 350 degrees. Add 2 more tablespoons of olive oil to the reserved garlic oil and pour onto a plate. Dip each slice of bread into the garlic oil and toast in the oven for 15 minutes or until crispy.
- Assemble the bruschetta, topping each with a spoonful of burrata and the tomato olive mixture. Add a prosciutto rose and Soli Organic Basil. Enjoy!
