Rosemary-Thyme Simple Syrup
- 2 cups Water
- 2 cups Sugar
- 8 sprigs fresh Soli Organic Rosemary
- 8 sprigs fresh Soli Organic Thyme
Cocktails
- 6 oz Rosemary-Thyme Simple Syrup (from above recipe)
- 9 oz Bourbon
- 6 oz Cranberry Juice
- 3 oz Fresh Lemon Juice
- 12-18 Fresh Soli Organic Mint Leaves
- Soli Organic Rosemary Sprigs (for garnish)
- Cranberries (for garnish)
Directions
Make the Rosemary-Thyme Simple Syrup
- In a saucepan, combine water, sugar, rosemary, and thyme. Heat over medium heat until sugar dissolves. Bring to a simmer for 5 minutes, then remove from heat and let steep for 30 minutes. Strain out herbs and cool completely.
Assemble the Cocktails:
- In a large pitcher filled with ice, combine rosemary-thyme simple syrup, bourbon,cranberry juice, and lemon juice. Stir well.
- To serve, divide the cocktail mixture evenly among 6 rocks glasses filled with fresh ice.
- Garnish each drink with a sprig of rosemary and a few fresh cranberries.
- You can make the rosemary-thyme simple syrup ahead of time and store it in the refrigerator for up to a week.
- If you prefer a sweeter drink, add an extra ounce of simple syrup to the pitcher.
- For a non-alcoholic version, simply omit the bourbon and top each drink with sparkling cranberry juice and soda water.
- Feel free to adjust the amount of mint leaves to your preference. Muddling the leaves slightly will release more of their flavor.
