Refreshing Herbed Feta Dip with Mint and Parsley

30 minutes | Yield: 6-8 Serviings

This vibrant and flavorful dip is a crowd-pleaser, perfect for gatherings or a light snack. The creamy feta cheese gets a zesty boost from fresh herbs and lemon, making it a delicious accompaniment to crackers and vegetables.

Ingredients

  • 8 ounces crumbled feta cheese
  • 1/2 cup plain Greek yogurt (full-fat or low-fat)
  • 1/4 cup chopped Soli Organic Mint leaves
  • 1/4 cup chopped Soli Organic Parsley leaves
  • 2 tablespoons olive oil
  • 1 tablespoon freshly squeezed lemon juice
  • 1/4 teaspoon garlic powder
  • Pinch of red pepper flakes (optional)
  • Salt and freshly ground black pepper, to taste
  • Crackers and assorted vegetables (cucumber slices, bell pepper strips, carrots, etc.) for serving

Directions

  1. Combine the creamy base: In a medium bowl, whisk together the Greek yogurt, olive oil, and lemon juice.
  2. Crumble and add: Add the crumbled feta cheese to the yogurt mixture. Use a fork to gently mash some of the feta for a creamier texture, while leaving some larger chunks for a delightful contrast.
  3. Herb it up: Stir in the chopped mint and parsley leaves.
  4. Seasoning magic: Add the garlic powder, red pepper flakes (optional), and a pinch of salt and pepper to taste.
  5. Taste and adjust: Give the dip a taste and adjust the seasonings as needed. You might want to add more lemon juice for a brighter flavor or a bit more salt for balance.
  6. Chill and serve: Cover the dip and refrigerate for at least 30 minutes to allow the flavors to meld. This also helps the dip thicken slightly.
  7. Ready to enjoy: Serve the chilled dip with an assortment of crackers and chopped vegetables.

Tips:

If you prefer a smoother texture, you can use a food processor to blend the feta cheese and yogurt together before adding the herbs and spices.

For a richer dip, substitute full-fat cream cheese for half of the Greek yogurt.

Leftover dip can be stored in an airtight container in the refrigerator for up to 3 days.

Experiment with different herbs! While this recipe features mint and parsley, you can try other combinations like dill, chives, or oregano.
