Glenn's Potato Salad with Fresh Dill is like a summer party in your mouth, with creamy potatoes, tangy pickles, and aromatic dill all dancing together to make a deliciously fun side dish.


  • 6 large Yukon gold potatoes diced and cooked
  • 1/2 cup chopped red onion
  • 2 stalks of celery chopped
  • 1 cup chopped dill pickles
  • 1/3 cup chopped fresh chives
  • 1/2 cup sour cream
  • 1 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 tablespoon chopped fresh Soli Organic Dill
  • 8 tablespoons pickle brine
  • Dash paprika
  • Salt and black pepper to taste


  1. In a large bowl, combine the cooked potatoes. red onion, celery, dill pickles, chives, sour cream, mayonnaise, mustard, dill, and pickle brine.
  2. Incorporate ingredients with two wooden spoons being cautious not to break down the potatoes. Season with salt and pepper to taste. Sprinkle with a little bit of paprika. Chill until ready to serve.
