Cornish Hens with Fresh Herbs

These tender Cornish hens are a tasty addition to any holiday table. And the fresh flavors of Rosemary and Thyme bring an extra something special to the dish.


  • 2 cornish hen, cut spatchcock style (butterflied)
  • 1 tsp. all-purpose seasoning
  • ½ tsp. Paprika
  • ½ tsp. ground red pepper
  • 1 tsp. garlic powder
  • ½ tsp. organic Rosemary
  • ½ tsp. organic Thyme
  • 1 tbsp. extra virgin olive oil
  • ½ cup unsalted chicken broth


  1. Preheat oven to 375 degrees
  2. Season cornish hens on both sides with all-purpose seasoning, paprika, red pepper, and garlic powder
  3. Garnish cornish hens with Living Organic Rosemary and Living Organic Thyme and drizzle with olive oil
  4. Pour chicken stock around cornish hens
  5. Bake for 1 hour 10-20 minutes, basting every 15 minutes
  6. Remove from oven, allow cornish hens to rest for 5 minutes
  7. Serve and enjoy!
