Arugula Winter Salad

Pops of pomegranate with pears, feta cheese, and tangy dressing in this Arugula Winter Salad will wow any crowd this holiday season.


  • 2 pears, sliced
  • 8 ounces Soli Organic Baby Arugula
  • 2 ounces feta cheese, crumbled
  • Pomegranate seeds
  • ⅓ cup hazelnuts, toasted
  • ¼ cup fresh Soli Organic Italian Parsley, chopped
  • ½ cup olive oil
  • 3 tablespoons champagne vinegar
  • 1 tablespoon honey
  • 1 tablespoon Dijon mustard
  • 1 tablespoon minced shallot
  • 1 tablespoon lemon juice
  • Pinch of salt


  1. Dressing: Add olive oil, champagne vinegar, honey, Dijon mustard, shallot, lemon juice, and salt to a mason jar and shake well.
  2. In a large salad bowl, layer the Soli Organic Baby Arugula, pears, feta cheese, pomegranate seeds, hazelnuts, and Soli Organic Italian Parsley, reserving some of the toppings to garnish.
  3. Toss the salad with the dressing and garnish with remaining toppings. Enjoy!
