Pops of pomegranate with pears, feta cheese, and tangy dressing in this Arugula Winter Salad will wow any crowd this holiday season.
Ingredients
- 2 pears, sliced
- 8 ounces Soli Organic Baby Arugula
- 2 ounces feta cheese, crumbled
- Pomegranate seeds
- ⅓ cup hazelnuts, toasted
- ¼ cup fresh Soli Organic Italian Parsley, chopped
- ½ cup olive oil
- 3 tablespoons champagne vinegar
- 1 tablespoon honey
- 1 tablespoon Dijon mustard
- 1 tablespoon minced shallot
- 1 tablespoon lemon juice
- Pinch of salt
Directions
- Dressing: Add olive oil, champagne vinegar, honey, Dijon mustard, shallot, lemon juice, and salt to a mason jar and shake well.
- In a large salad bowl, layer the Soli Organic Baby Arugula, pears, feta cheese, pomegranate seeds, hazelnuts, and Soli Organic Italian Parsley, reserving some of the toppings to garnish.
- Toss the salad with the dressing and garnish with remaining toppings. Enjoy!
